Drawing from a practice of preserving duck eggs in a brine solution called salted egg, Fossa uses housemade salted egg cereal for one of their most iconic bars. Expressive of cultural terroir, this bar is representative of Singaporean's favorite Tze-Char dish (street food).
TASTING: vanilla pudding, sweet, umami, salty, subtle crunch, piquante finish
PAIRING: tangy soft ripened cheese, e.g. Robiola Bosina, sour beers, e.g. gose or berliner weisse, blended whiskey
