Our Ucayali bar won a 2023 Good Food award (https://goodfoodfdn.org/)! The Good Food Awards celebrates exceptionally flavorful craft foods and also requires that each entry meets strict social and environmental sustainability standards. This is our sixth consecutive Good Food Awards winner! Previously this bar also won a Gold sofi award and Silver at the International Chocolate Awards World finals.
The cacao for this multiple award-winning origin comes from the jungles of Peru. It's named after the Ucayali river, one of the major headwaters of the Amazon, and the farmers living along its shores grow several varieties of fine flavor cacao. They bring the cacao on boats to our partners at Ucayali River Cacao, where the beans are expertly fermented and dried at their new facility. We've personally visited the fermentation and drying facility and have met many of the farmers.
We also freshly press the cocoa butter for this from the same Ucayali beans we use to make the chocolate, resulting in intense single origin flavor and exceptional smoothness. We’re one of the only chocolate makers in the country to press our own cocoa butter (https://goodnowfarms.com/our-award-winning-process/), and it makes a world of difference in flavor.

We source these beans from the Q’eqchi Maya farmers of San Juan Chivite, Guatemala, who harvest the cacao fruit from wild trees surrounding their village. They also ferment and dry their own beans at tow different facilities they built in their village, which allows them to carefully control the fermentation and drying process.
During our first visit to San Juan Chivite the farmers told us their outdated fermentation and drying facility was causing problems with quality control, and was also too small to handle all of the cacao in the area. We helped fund the construction of an updated facility, and now the association has grown from the original ten farmers to more than thirty, and the quality of their beans is exceptional.
Although the association has grown we still receive beans solely from the original ten farmers, who do a custom harvest, fermentation and drying protocol exclusively for us. This allows us to receive beans of consistently high quality which reflect the specific flavors we wish to highlight.
This bar is crafted with freshly pressed Asochivite cocoa butter for intense single origin flavor and exceptional smoothness. We're one of the only chocolate makers in the country to press our own cocoa butter and it makes a world of difference.
