From the Maker

Guava was introduced to Hawai‘i during initial Western contact in the 1700s. It has spread rapidly and is now considered the Hawaiian islands’ most prolific wild fruit. Guava’s flavor is uniquely tart and sweet, commonly described as a hybrid between a strawberry and a pear. In Hawai‘i the fruit is predominately consumed fresh, in the form of juice, and in jellies and jams.

Over the years we’ve gravitated our focus on inclusion flavors that tap into the unique cuisine that Hawai’i is known for. When attending chocolate festivals around the world, it’s exotic flavors like our Liliko’i x Passion Fruit bar that continues to stop people in their tracks and say, “WOW, that’s different!”.

This lead us back to the lab inspired to create something exotic, Hawai’i centric, and most importantly; DELICIOUS, that captivates people’s attention and taste buds.

We created a small batch of Kuawa x Guava bars back in July of 2023 and have been selectively introducing the flavor to the public through various channels. We are so happy with the feedback we’ve received and are really proud to have this flavor as a permanent part of our collection. It’s now online for the first time and here to stay. If you haven’t tried it yet, we can’t wait for you to do so. As always, we would love to hear your thoughts. Aloha and happy tasting!

Marou’s Story

Bean-to-bar is a movement in chocolate, much like the growing craft beer industry, in the sense that we are moving away from mass production. With this quality over quantity model we craft only the finest dried beans into chocolate all under one roof.

Bean-to-bar makers are also defined by the fact that we direct trade with cacao farms around the world, paying socially responsible prices for quality. In contrast, the vast majority of cacao for the world's billion dollar chocolate industry is sourced from West Africa. Most commodity beans sourced from this region are priced so low that farmers cannot afford even basic living necessities. This creates human rights issues on a massive scale that include human trafficking and child slavery that are directly tied to the sale of cacao.

Craft chocolate is the opposite, rather than sourcing cheap to blend from a variety of regions, we source cacao at high prices and tell the story of where the chocolate is grown.

SOURCING: This is the most important step. You cannot make quality chocolate without quality cacao. We ethically source the finest cacao beans from Hawaii and around the world.”
